Chandler somewhat understands Valentine's Day - since she isn't in preschool (yet, I just signed them both up for the Fall!!) she doesn't really get to experience the V-Day exchange. They both had dance class yesterday, so I baked some cookies for them to take. It was easy and quick (as quick as baking any cookies are), slapped a label on a baggie and voila! They both were excited about giving the bags to their friends at dance. I'm glad I emphasized the GIVING part of Valentine's and not the Receiving. Chandler even got a few pieces of candy from a few of the girls and I know she's glad she had something to exchange with them.
No big surprise, my recipe for the cookies, came from King Arthur Flour!
I did modify a little bit based on what I had/had my friend bring over & reading the comments left on the recipe, so here's what I did:
Cranberry-White Chocolate Drops
2 (8oz) sticks unsalted butter, very soft
1 cup (7 1/2 ounces) packed brown sugar
3/4 cup (5 1/4 ounces) granulated sugar
1 teaspoon salt
1 teaspoons vanilla (that's all I had!)
1 tsp orange zest
1 large egg
1/2 teaspoon baking soda
2 1/2 cups Unbleached All-Purpose Flour
1 1/2 cups (9 ounces) white chocolate chunks
6oz bag blueberry infused dried cranberries (my friend brought these over, they add just a hint of blueberry and make the cookies amazing and mysterious!)
1 cup (7 1/2 ounces) packed brown sugar

*No nuts, since I didn't want to deal with unknown allergies!
I followed all the baking directions exactly, except mine were perfectly cooked in 10 min for the first set and 9.5 min for the others since the pan was already warmed.
